Many years ago, a nutritionist saved my life by prescribing a low sodium, plant-based diet when my health was in serious jeopardy. Illness-induced, my kidneys and cardiovascular system were compromised, and my gastrointestinal system was a mess. So, for 3 months, I ate nothing but homemade, pureed, vegetable (vegan) soups. Miraculously, I started getting better, and before long my system returned to normal – and I started living again. I have since remained in a systemic remission by maintaining a (almost exclusive) plant-based diet.
I hope you will enjoy the following recipes! Many of the recipes are BDC originals, and others are ones I found to be very appealing, but have modified to be more vegetarian-friendly. While I advocate for phytonutrient-rich plant foods, I have included recipes that will appeal to all types of diets. Fish, chicken and meat can be added to any of the appetizers, salads, and casseroles in this section – depending on your taste.
