Ingredients:
- 1/2 cup unsweetened almond milk
- 1 13 oz. can of Natural Value Coconut Cream
- 1 tablespoon pure (Grade B) maple syrup
(or more or less for desired sweetness)
- 1/4 teaspoon sea salt
- 1 tablespoon vanilla extract
(I prefer Madagascar vanilla)
- 1/4 cup Chia seeds
- 1/4 cup Hemp Hearts
Directions:
Place the first 4 ingredients in your Vitamix or blender and beat on med-high for 25 seconds. Then, add the last 2 ingredients and at “low” speed for 10 seconds. Transfer mixture to 4 – 6 oz. glass or ceramic ramekins and cover tightly. Let pudding set and thicken in refrigerator overnight. In the morning, serve with pureed natural fruits (fresh or frozen). I like pureed raspberries best – topped with chopped raw walnuts. Cherries work well too!
